Black rice pudding with Chia Seeds

Here’s a recipe for black rice pudding with chia seeds:

Ingredients:

- 1 cup black rice

- 2 cups water

- 1 cup coconut milk (plus extra for serving)

- 1/4 cup maple syrup (or sweetener of choice)

- 1 tsp vanilla extract

- 1/4 tsp salt

- 3 tbsp chia seeds

- Fresh fruit (for topping, optional)

- Toasted coconut flakes (for topping, optional)

 

Instructions:

1. Rinse the Rice:

- Rinse 1 cup of black rice under cold water until the water runs clear.

2. Cook the Rice:

-In a medium saucepan, combine the rinsed black rice and 2 cups of water. Bring to a boil.

- Reduce the heat, cover, and simmer for about 35-40 minutes, or until the rice is tender and the water is mostly absorbed.

3. Add Coconut Milk and Sweetener:

- Stir in 1 cup of coconut milk, 1/4 cup of maple syrup, 1 tsp of vanilla extract, and 1/4 tsp of salt.

- Continue to cook over low heat, stirring occasionally, for another 10-15 minutes, until the mixture thickens to a pudding-like consistency.

4. Add Chia Seeds:

- Stir in 3 tbsp of chia seeds and mix well.

 - Remove from heat and let the pudding sit for about 10 minutes to allow the chia seeds to expand and thicken the pudding further.

5. Serve:

 - Serve warm or chilled, topped with fresh fruit and toasted coconut flakes if desired.

- Add an extra splash of coconut milk before serving for added richness.

 

Tips:

Make Ahead: This pudding can be made ahead and stored in the refrigerator for up to 5 days. The chia seeds will continue to thicken the pudding as it sits, so you might want to add a little extra coconut milk before serving if it becomes too thick.

Variations: You can add spices like cinnamon or cardamom for extra flavor, or mix in dried fruits like raisins or cranberries while cooking the rice.
